The vibrant green colour of matcha is due to chlorophyll, shade-growing the tencha leaves for the last 2 to 4 weeks before harvest increases chlorophyll production dramatically, which is why ceremonial-grade matcha is a deep, vivid green rather than the dull olive of lower-grade powders.
