While the hot version gained popularity in Western cafes around 2015–2016, the iced format followed as cafes recognised that wellness-focused drinkers still wanted their anti-inflammatory golden drink in summer.
Curcumin — the compound in turmeric that gives it both its brilliant yellow colour and its anti-inflammatory properties — is fat-soluble, meaning it is best absorbed when consumed with a fat-containing food or drink.
